Black tea is made from tea leaves more heavily oxidized than other tea varieties. It is during the production process that the membranes of tea leaves are broken to allow the juices and essential oils to emerge, giving black teas their characteristic aromas and flavour. The dried flavorful juices on the surface of the leaves remain relatively stable until exposed to boiling water during infusion.
