The seed of an evergreen tree, Nutmeg comes from India, Sri Lanka and Indonesia. It is the pit of a fruit that also yields Mace, which is the seed casing that surrounds Nutmeg. A necessity for perfect gingerbread, Nutmeg is found in most European and Middle-Eastern cooking styles. Caribean food often uses Nutmeg in volume because its bitter qualities counteract sweet ingredients.
