Grown at elevations of 9,000 to 11,000 feet, Maca plants are subjected to fierce winds, severe sunlight and intese cold. Maca is a root vegetable or tuber that is ready to harvest 6 to 7 months after planting. Maca tubers can be boiled or dried and have a sweet, tangy taste and an aroma similar to butterscotch.
